Abstrak
Local food diversification is a vital strategy to enhance food security, improve dietary quality, and boost the economic value of products based on Indonesia's abundant local resources. This article reviews the potential and development of local food diversification in Indonesia, focusing on ingredients such as corn, sweet potatoes, cassava, legumes, tropical fruits, freshwater fish, and other local resources. Utilizing these local food ingredients through innovative processing methods results in value-added products, including tortilla chips, sweet potato donuts, candied bilimbi, and catfish noodles. Local food diversification has proven effective in expanding access to nutritious food while extending product shelf life. However, challenges such as limited processing technology, low public awareness of local food, and inadequate policy support hinder its full potential. Collaborative efforts among governments, businesses, and communities are necessary to enhance innovation, technology, and the promotion of local food products. Sustainable local food diversification serves as a strategic solution for achieving national food independence while improving the welfare of local communities.
