Formulasi Sereal Pati Garut Dan Tepung Hati Ayam Untuk Anemia Pada Remaja Putri

Prevalence of anemia in Indonesia reached 23.7%, with 32% of cases occurring at the age of 15-24 years, where girls have a higher risk (27.2%) than boys (20.3%). One of the reasons for anemia is insufficient intake of dietary sources of iron, such as chicken liver which contains 15.8 mg/100 grams of iron. This study developed a ready-to-eat cereal based on arrowroot starch flour and chicken liver flour as a practical solution to overcome anemia in adolescent girls. The study used an experimental design with organoleptic tests on 30 non- standard panelists, and data were analyzed using Kruskal-Wallis and Mann-Whitney due to non-normal distribution. Selected formulas were tested for energy, protein, fat, carbohydrate, water content, ash content, and iron content. There were differences in color and aroma quality between formulas F1, F2, and F3, with the selected formula being F2 (60% arrowroot starch flour and 40% chicken liver flour). The nutritional content of the selected formula included 463.32 kcal total energy, 11.06% protein, 16.62% fat, 67.37% carbohydrate, 1.89% moisture content, 3.05% ash content, and 2.77 mg iron. Although it meets the SNI standard for cereals, the iron content hasn’t reached 15% of the RDA with only 2.77 mg.
